I have some really exciting news! ...But I can't share it quite yet because it might be jumping the gun. Let's just say that I had a working interview today and it was the best hour of "work" I've ever experienced in my admittedly semi-short life. It was sooooo fun!
In other news, since I've been sick, I've been making a lot of home-y dishes that make me feel comfortable, full, and satisfied. It's just what you're looking for when you're not too hungry but you need nourishment.
The first thing I made was chicken stew. My chicken stew turned out more like a super-chunky chicken noodle soup but it was still really satisfying. I used celery, carrots, potatoes, bell peppers, and onions from the Farmer's Market. I didn't cook with a whole chicken but used chicken breasts and added bacon instead. We ate this the other night with a nice artisan garlic bread loaf. So yum.
Very chunky :) This recipe takes two hours of simmering so remember to get a head start.
I really enjoy eating breakfast burritos. It's something that's great for lunch too because it's not too heavy, but is still filling enough to tide you over until dinner. These breakfast burritos involved a mixture of my home fries, sautéed bell peppers, scrambled eggs made with whole milk, taco seasoning, Cholula, and chili powder. On top of that, I add cheese to some Guerrero tortillas. Tell me, how do you make your breakfast burritos? I usually add diced green chilis to add even more kick.
Even better if you have the time to put it in the oven for about 8-10 minutes to make the outside nice and crispy, the inside nice and warm and gooey.
Nick's parents and little brother, Mac, are coming to visit us tomorrow! Since Mrs. Lerum is allergic to wheat, I'm thinking of making a rice noodle dish with fresh ingredients from tomorrow' Farmer's Market. I found this Malaysian fried noodle recipe that looks really nice and spicy, just the way I like my food :)
Hope you're having a good weekend! It's so nice being well again! Nothing like three days in bed to make me appreciate my health again. Though...I did start the Twilight Series while I was bedridden and I CAN'T BELIEVE HOW GOOD IT IS AND HOW I WAITED SO LONG TO READ IT! TEAM EDWARD+BELLA! I LOVE IT!
