Halfway Chocolate Chip Cookie Bars and (BOMB) Salted Caramel Ice Cream

I'm about to share two epic desserts with you. I'm so excited!

I don't really like chocolate at all but I love the flavor it lends to chocolate chip cookie dough. So when I make my weekly batch of chocolate chip cookies for my husband's lunch, I refrigerate the dough for as much time and patience as I can spare to let the flavors meld, and make a few cookies sans chips. I love them! Well, this halfway chocolate chip cookie bar from The Kitchn has quite a few chocolate chips in them (a whole layer in the middle in fact) but I loved them still! The bottom salty cookie layer and the top, slightly sweet, and crunchy meringue layer were enough to make me want to eat more more more! This dessert is a combination of great textures, has a wonderful balance of sweet and salty, and is very easy to make (I threw this together in less than 20 minutes!). Winner!

Salted caramel is my favorite dessert flavor. My last dessert on earth would either be salted caramel macarons (maybe 6 of them?) or Huckleberry’s Salted Caramel Bars. Now I’d have to add this Salted Butter Caramel Ice Cream from my favorite ice cream guy, David Leibovitz, to that list. Unlike the halfway cookies, making this ice cream was a lot of work, and required my husband’s help, but it was so, so, so worth it. The flavors are perfectly creamy, salty, and caramel-y. It’s a softer ice cream (which I adore!) because of the base custard I labored over. There's a possibility it takes me a long time to make custard because I overdo it because I don’t have a thermometer and just keep going until it looks pretty custard-y and thick, but these bites of ice cream were the best bites I’ve ever taken. Paired with the halfway bars, I thought it would be too much. And it was. It was way too much divine dessert goodness on one plate. I can’t wait to do it again. 



I'm not sure I'd make the pralines again. Some guests and I were surprised by their crunchy presence and the ice cream was great enough without an accessory.
